Vegan Coconut and Chocolate Biscuits

Vegan Coconut and Chocolate Biscuits are easy to make and, as the name suggests, are full of coconut and chocolate goodness.

My daughter is one of the kindest and most joyful humans I know; at seven, she inspires me to spread joy in the world. Her teacher moved into a brand new home in our area last weekend, and Dahlia wanted to give him and his partner a housewarming gift to celebrate their life event. Buying and moving into your first home is a BIG event and so exciting!

My daughter came up with some very random ideas and eventually settled on homemade biscuits, and this is our Vegan Coconut and Chocolate Biscuits recipe.

  • 1/3 cup of coconut flour
  • 1/3 cup of almond meal
  • 1/3 cup of coconut sugar
  • 1/3 cup of plain flour
  • 1/4 teaspoon of baking powder
  • 1 tablespoon of cacao
  • 1/3 cup of virgin coconut oil
  • 4 tablespoons of soy milk (or any plant-based milk)
  • 1 tablespoon of choc hazelnut and coconut butter

How To Make Vegan Coconut and Chocolate Biscuits

  • Preheat the over to 160 degrees C
  • Line a tray with unbleached baking paper
  • Add all the dry ingredients to the bowl and mix
  • Add the virgin coconut oil and choc hazelnut, and coconut butter and mix
  • Add the milk and combine all the ingredients
  • Roll the batter into small balls, place on a tray and slightly flatten them. Leave some space between each ball.
  • Bake for 12 minutes.
  • Cool on a rack, and enjoy!

Easy, right? And it doesn’t end there. We have more recipes for you in our blog!

For those with dietary preferences or allergies:

If someone has a nut allergy, they can easily substitute almond meal with sunflower seed or oat flour. The choice of plant-based milk can also be adapted to cater to various dietary needs, such as soy, almond, or oat milk.

Tips and Tricks:

Here are a few essential tips to ensure your biscuits turn out perfectly:

  • Measuring Coconut Flour: Coconut flour can be quite absorbent, so it’s important to measure it accurately. Use a gentle hand and level off the measuring cup to avoid excess dryness.
  • Texture Matters: To achieve the ideal biscuit texture, slightly flatten the batter before baking, ensuring even baking and a delightful crunch.
  • Storage: Store your biscuits in an airtight container to keep them fresh and preserve their texture.

Serving Suggestions and Beyond:

These Vegan Coconut and Chocolate Biscuits aren’t just a delightful snack; they can be enjoyed in many ways:

  • Afternoon Tea: Pair them with your favourite tea or coffee for an indulgent afternoon treat.
  • Sweet Snack: Keep a few biscuits handy for when those sweet cravings hit. They’re an excellent alternative to store-bought sweets.
  • Gift of Love: These biscuits are wonderful, homemade presents. Consider gifting them to friends and family on special occasions.
