Coconut Satay Sauce Recipe

This is a light coconut satay sauce that is full of flavour. Use it as a dipping sauce or curry sauce base in a stir fry.

Coconut Satay Sauce Ingredients:

  • 1/4 cup of peanut butter
  • 1 TBS Coconut Oil
  • 1/4 cup of Coconut Chips
  • 1 tsp of curry powder
  • 1/4 tsp of ginger powder
  • 1/4 tsp ground cumin
  • 1/4 tsp turmeric
  • 1 TBS ketchup manis
  • 1 tsp soy sauce
  • 4 curry leaves
  • A squeeze of lime juice
  • 1/2 – 1 cup of water (use less or more depending on how thick you’d like the sauce)

Optional for Extra Kick:

  • Chilli flakes (to taste)

If you’d like your coconut satay sauce to have a bit more kick, add some chilli flakes and double or triple the amount of the powdered ingredients.

What to do:

  1. Toast the coconut chips in a pan on low heat till golden in colour, then set aside the toasted chips.
  2. Put the pan back on the stove and the coconut oil, heat on low heat for about 20 seconds, and add the spices and curry leaves. Keep heating to release the spicy aroma, and then add the peanut butter and sauces and mix it all together.
  3. Add the water gently to the mix, which should look like a thick paste. Keep stirring, then add the lime juice. (add more water for a smoother sauce)
  4. Simmer on low heat for 5 mins, and stir intermittently to remove lumps.
  5. Stir in the toasted coconut chips and enjoy.
